Having a dad with wheat and milk allergies, it's an adventure at times to search for dessert recipes. After finding this one, I modified it to suit the allergies. The strong dark cocoa mostly covered up the taste of spelt... and I didn't find the coconut milk noticeable. The recipe can be made with whole wheat or white, and regular milk as well.
- 1/2 cup sugar
- 1/2 cup spelt flour
- 1 teaspoon baking powder
- 1/2 cup butter, softened
- 4 tablespoons dark cocoa powder
- 2 eggs, beaten
- 4 tablespoons milk (used So Delicious Coconut Milk)
- 1/2-1 cup blueberries
- Preheat oven to 350F
- Mix together first seven ingredients (not blueberries)
- Grease 9in round, pour in ingredients
- Sprinkle blueberries on top
- Bake 18-20 minutes
- Serve dusted with powdered sugar
